Mushroom Clear SoupHealthy Recipe:  Chicken Mushroom Clear Soup

Ingredients

  • 1 chopped chicken breast
  • 2 handfuls of mushrooms
  • 1 chopped onion
  • chopped spring onions
  • 2 chicken stock cubes
  • 1 pot of boiling water
  • 1 tsp Chinese 5 Spice
  • Salt & pepper

Method - Piri Piri Sauce

  1. put chicken in boiling water to cook
  2. Place the rest of the ingredients into the pot and simmer for 15 - 30 mins

Alternative - for vegetarian option, use veg stock cubes instead and lose the chicken.
