Healthy Recipe: Chicken
Mushroom Clear Soup
Ingredients
- 1 chopped chicken breast
- 2 handfuls of mushrooms
- 1 chopped onion
- chopped spring onions
- 2 chicken stock cubes
- 1 pot of boiling water
- 1 tsp Chinese 5 Spice
- Salt & pepper
Method - Piri Piri Sauce
- put chicken in boiling water to cook
- Place the rest of the ingredients into the pot and simmer for
15 - 30 mins
Alternative - for vegetarian option, use veg
stock cubes instead and lose the chicken.
Healthy Snack Idea
Hummus with wholemeal pitta bread and red
pepper, cut into sticks. Healthy alternative for party food or
that Saturday night dvd.
